Do you know what is a Ramen?

Ramen is a Japanese noodle soup. It consists of Chinese-style wheat noodles served in a meat or fish-based broth, often flavored with soy sauce or miso, and uses toppings such as sliced pork/beef, nori, menma, and scallions.

 INGREDIENTS:

– Celery

– Scallion

– Leek

– Onion

– Eggs

– Beef Meat

– Beef Bone

– Miso Paste

– Ramen Noodles

– Nori

– Hondashi

PROCEDURE:
  • For the broth
  1. Chop onion, scallion, and celery.
  2. Put the onion, scallion, celery, beef bone, beef meet, and the hondashi in one big casserole.
  3. Add water (almost full).
  4. Bring into a boil for 2 hours.
  • For the noodles
  1. Boil water first.
  2. Drop the noodles then gently stir to untangle.
  3. Blanch it for just 1.5 minutes.
  4. Strain the noodles.
  • Plating
  1. Add the strained noodles in the bowl.
  2. For every serving, incorporate 1/2 tablespoon of miso paste and 19 grams of butter diluted in 40ml hot broth.
  3. Garnish with beef meat, scallions, eggs, and mushroom.
  4. Add the nori last since it quckly gets soggy.

New to sushi? 🍣

California Maki Sushi is your best bet! It is often prepared with cooked imitation crab 🦀 Hence, considering it as a starter sushi for people who are not yet ready for raw fish.

In addition to that, it is also uncomplicated to make as the ingredients are easily accessible! 😉

INGREDIENTS:

➡️ Sushi Rice

➡️ Rice Vinegar (Marukan)

➡️ Avocado

➡️ Cucumber

➡️ Nori

➡️ Caviar

➡️ Crab Stick

➡️ Japanese Mayonnaise

➡️ Ginger

➡️ Wasabi Sauce

PROCEDURE
  • PREPARING THE RICE:
  1. Cook Sushi rice. Use an even 1:1 ratio of rice to water. Wash the rice 3 times prior to cooking.
  2. Mix enough amount of rice vinegar with the cooked Sushi rice.
  • PREPARING THE FILLING:
  1. Slice the Cucumber and Avocado lengthwise.
  • ASSEMBLING: 
  1. Put the nori on the bamboo mat. Making sure that the rough part is facing up.
  2. Flatten a layer of Sushi rice on top of the nori. Don’t make it too thick to make ample space for the fillings.
  3. Spread some caviar on top of the rice.
  4. Turn the product upside down.
  5. Place the fillings – Crab sticks, Avocado, Cucumber, and Japanese mayonnaise.
  6. Roll the sushi then slice it into bite-size pieces.
  • PLATING: 
  1. Arrange sushi rolls aesthetically.
  2. Put some ginger and wasabi on the side.
  3. Top the sushi rolls with some more Japanese mayonnaise or spicy mayonnaise.

This is one of the Filipino dishes that I’m very proud of so I chose this. And to add to that, it’s just simple and super easy to make but it still has great nutritional value and taste!!! ☺️ Perfect for those who want to boost their immune system to combat COVID-19 💁🏻‍♀️

Tinola is an authentic Filipino 🇵🇭 soup usually served as a main course with white rice. Traditionally, this dish is cooked with chicken, wedges of chayote, and leaves of the siling labuyo (chili pepper) in broth flavored with ginger, onions and fish sauce. But I made it with my own twist to make this dish a fusion of immunity boosters so I incorporated some lemongrass 🍋🌿

INGREDIENTS:

➡️ Chicken Meat

➡️ Chicken Liver (optional)

➡️ Chicken Gizzard (optional)

➡️ Green Papaya️

➡️ Ginger

➡️ Garlic

➡️ Onion

➡️ Chili

➡️ Moringa

➡️ Lemongrass

➡️ Fish Sauce

➡️ Black Pepper

➡️ Salt

PROCEDURE:
  1. Heat oil on the pan; just a small amount because the chicken itself will produce some more oil. Then saute onion, garlic, and ginger until you smell the aroma.
  2. Add the chicken meat, liver, and gizzard. Mix and cover it for 10 minutes or until the chicken browns a little.
  3. Add the lemongrass and water then cover and wait for 15 minutes.
  4. After 15 minutes add the condiments (salt, pepper, fish sauce). Mix, taste, and adjust to your liking.
  5. Scoop out the grease floating on top of the soup.
  6. Then add the green papaya. Cover until the papaya is cooked.
  7. Add the chillies and moringa leaves then cover again and do a 3-minute final cooking!

Be resourceful in plating! As for me, I used papaya. I just scraped off the papaya meat to make it shallow ☺️ I also sprinkled moringa leaves and scallions on top.
